Cheesy Shii-tacos

This is a real easy-peasy recipe for a quick weeknight dinner. Shiitakes work well here and pack a lot of flavor, but oysters, pioppini, chestnuts, or a mix would be perfect, too. 

  • 1lb shiitakes, cut into ½ inch thick strips

  • 1 ½ yellow onions, cut into ⅛ inch thick half moons

  • 1 cup cheddar, freshly shredded

  • Olive oil

  • Chili powder

  • Garlic powder

  • Salt

  • Lime

  • Cilantro, roughly chopped

  • Tortillas

  • Any toppings you like, e.g., sliced radishes, sliced cabbage, toasted pepitas, etc

  1. Heat olive oil in a large non-stick skillet over medium-low.

  2. Add onions and season with salt.

  3. Meanwhile, toss shiitakes with just enough olive oil to coat them. Season with chili powder, garlic powder, and salt. Toss to cover shiitakes. 

  4. When onions are soft, sweet, and browned, remove them from the pan and set aside.

  5. Add shiitakes to pan, mixing occasionally, until shiitakes are tender.

  6. Remove the pan from heat. Return the onions to the pan and mix. Add the cheddar to the pan and mix, so that the cheddar melts and binds the shiitakes and onions together.

  7. Serve mushrooms in warmed tortillas. Top with cilantro,a squeeze of lime, and any other toppings you like.
